Chocolate Chip Cookies

Ingredients

  • 3/4 cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1.5 tsp vanilla essence/extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • Pinch of salt
  • 145g dark chocolate

Steps

Sift the flour, baking soda and salt and set aside.

Place the butter in the microwave for 25 seconds just until it’s semi melted. Add the sugar to the butter and whisk until light in colour. Add the egg and vanilla essence or extract and whisk until smooth.

Add the dry ingredients to the wet mixture and mix until well combined. Break up the dark chocolate into small chunks and add it to the cookie dough mixture, stirring until incorporated and evenly distributed in the dough. Roll the dough into balls and place in the fridge or freezer for 15-20 minutes.

Place the cookie dough onto a lined baking tray. Bake in a preheated oven at 180 degrees for 12 minutes. Let the cookies cool for at least an hour before eating.
