
Ingredients
- 1 cup cake flour
- 1/3 cup oats
- 1/4 cup dark cocoa
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 50ml melted butter
- 1 tbsp oil
- 200g brown sugar
- 1 tsp vanilla essence
- 3 large strawberries
- Chocolate chunks
Steps
Sift together the flour, baking powder, baking soda, salt and cocoa. Then add the oats and set aside.
Add melted butter, 1tbsp oil and sugar to a bowl and whisk until well combined. Now add in the egg and vanilla essence and whisk until smooth and most of the sugar has dissolved. Add the dry ingredients to this and mix until combined.
Dice 3 strawberries into small chunks. Add to the cookie dough along with chocolate chunks of your choice. Mix until evenly distributed.
With an ice cream scooper, scoop balls of the cookie dough and place on tray or in a muffin tray. Don’t worry about them being perfectly round. Place in the freezer for an hour.
Take the cookie dough out the freezer. Using your hands, roll the scoops of dough into a ball and place on a lined baking tray. Bake for 12 minutes in a preheated oven at 180 degrees. Remove the cookies and let them cool for at least 2 hours.
Optional: dust with icing sugar
