

Ingredients
- 1/2 cup walnuts
- 1 cup cake flour
- 1/2 cup oats
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 5 tbsp butter
- 3 tbsp hard coconut oil
- 1 egg
- 1 tsp vanilla essence/extract
- 1/4 cup chopped dark chocolate
- 1 large apple
- 1 tbsp honey
- 1/2 tsp cinnamon
Steps
Peel and chop your apple into small cubes. Place in a microwave safe bowl along with the honey and 1/2 tsp cinnamon. Place into a microwave for 2 minutes until apples are just soft. Strain out any liquid in the apples and set aside to cool completely.
Chop the walnuts and toast them lightly in a pan on a low heat for around 3 minutes.
Sift all the dry ingredients and spices. Set aside. To a bowl add the butter, coconut oil and both sugars. Using an electric beater mix until the mixture is pale in colour. At this point add in the egg and vanilla essence/extract. Mix just until combined.
Add the sifted dried ingredients into the butter mixture. Mix until combined. Add in toasted walnuts, apples and dark chocolate chunks. Mix everything ensuring even distribution. Place the dough into the refrigerator for 10 minutes.
Scoop the chilled dough into small balls and place on a cookie tray lined with baking paper. Flatten the cookie dough balls just slightly, this will help to ensure an even bake.
Place the cookies in a preheated oven at 180 degrees. If your cookies are small bake for around 12-13 minutes, if your cookies are larger bake for 13-14 minutes, depending on your oven.
Remove from the oven and let it cool.
*Optional *Add 2 tbsp icing sugar, 1/4 tsp cinnamon and 2 tsp milk and mix until you have a runny icing that you will be able to drizzle over the cooled cookies.
