Banana Oat Pancakes with Pomegranate Syrup

Ingredients

  • 1 cup oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp icing sugar
  • 2 eggs separated
  • 20ml canola or olive oil
  • 180ml milk
  • 1 banana
  • 20g dark chocolate chunks

Steps

In a mixing bowl or jug, combine oats, baking powder, salt, 2 tbsp icing sugar, 2 egg yolks, oil and milk. Blend together until smooth. Add in the chocolate chunks.

In a separate bowl, add the 2 egg whites and whisk just until almost stiff then add the remaining 1 tbsp icing sugar and whisk until the egg whites are glossy and stiff peaks. Gently fold the egg whites into the pancake batter just until combined.

Add oil to pan on medium heat. Gently fry the pancakes until they start forming bubbles then flip and fry for another minute until golden brown

Pomegranate Syrup

  • Juice of 2 pomegranates
  • 2 tbsp brown sugar
  • 1 tsp honey
  • 1 tsp lemon juice
  • 2 tsp water

Add all the ingredients in a saucepan and place on a high heat, let the mixture reduce down until you have a syrup like consistency.
