Homemade Pasta

Ingredients

  • 4 cups all purpose flour
  • 4 eggs
  • 1 tsp salt

Steps

Sift the flour and salt then add it to a clean counter top. Form a well in the middle. Add the 4 eggs in the middle of the well, then with a fork, whisk the eggs gently and slowly, incorporating the flour a little at the time constantly, until you have formed a dough. Knead for 10 minutes to allow the gluten to build. Once kneaded, placed in cling wrap and let it rest for 30 minutes.

Once the dough has rested, divide it into 4 pieces and roll them into balls. Take a piece and flatted it slightly, make sure to dust it with flour to ensure it does not stick to the machine, then run it through the pasta machine on the 1st setting, then increase the setting to 2 and run the pasta through again. At this stage, you can add your herbs onto one half of the pasta and fold the the other half over. Now run it through the machine again, after each run, increase the setting by 1, you want to do this just until the pasta sheet are thin enough to be able to see through it. Once it has reached this stage, you can run it through the cutter to form your pasta strips. Add some flour to help the pasta strands not stick to one another then place the pasta over a rack to dry. Repeat this process with the remaining pasta dough.

Boil the pasta for 10 minutes just until al dente.
