Mediterranean Fish Stew

Ingredients:

  • 2 large onions
  • ½ green pepper
  • 5 cloves of garlic
  • 1 can of chopped tomatoes
  • 200g baby spinach
  • 1 tsp sugar
  • 1 tbsp smoked paprika
  • 1 tbsp lemon juice
  • 1 tbsp salt
  • ½ cup white wine
  • 1 tbsp fish sauce
  • ¼ cup chopped olives
  • ¼ cup chopped spring onions
  • 4 white fish fillets
  • Fresh parsley

Steps:

Dice the onions, peppers and garlic really finely in a processer, add to a pan with olive oil and make sure the pan is on a medium to high heat. Cook the onions until soft and just going brown, then add the sugar, smoked paprika and fish sauce and mix until well combined. Now add in the white wine and let the alcohol cook off a bit. Once the alcohol has cooked off, add in the can of tomatoes, baby spinach, lemon juice and salt. Let it simmer until the baby spinach has wilted, and the sauce has slightly reduced.

At this stage, you can add in the fish fillets, the chopped olives and spring onions. Cover with a lid or foil and let it cook just until the fish is cooked. Remove from the heat and add the chopped parsley.

Cauliflower Rice (Optional side dish)

  • 1 head of cauliflower
  • 7 olives
  • ¼ cup Chopped spring onions
  • 1 tbsp lemon juice
  • Salt to taste

Add the cauliflower, olives and spring onions to a food processer and let go until the mixture is a very fine grain. Add olive oil to a pan, place it on a medium heat and add in the cauliflower mixture. At this stage, season with salt and lemon juice and cook until the cauliflower is cooked through but has a slight bite to it. Enjoy!
