Chocolate Banana Bread

Ingredients:

  • 3 medium bananas
  • 80ml oil
  • 1/2 teaspoon baking soda
  • 1 tsp baking powder
  • 1 pinch salt
  • 150g sugar
  • 1 large egg
  • 1 teaspoon vanilla essence
  • 40g cocoa
  • 140g cake flour
  • 65g coconut flour
  • 30g icing sugar (for the glaze)
  • 1 tbsp milk

Steps:

Mash the bananas in a bowl, and then add the baking soda, sugar and egg and whisk until everything is thoroughly combined.

Whisk in the oil and vanilla essence

Sift in the cocoa, flour, coconut flour and baking powder and mix everything until well combined.

Pour into greased and lined bread tin and put it in the preheated oven at 175 degrees for 50 minutes.

Once it’s out let it sit for for 10 minutes. Combine the icing sugar and milk to make a thin glaze. Brush or drizzle over the top.

Let it cool for a further 5 minutes, slice and enjoy!
