Spring Rolls

Makes 24

Ingredients:

  • 1 large onion
  • 4 grated garlic cloves
  • 1 tbsp grated ginger
  • 500g shredded cabbage and carrot
  • 2 x minced chicken breast
  • 3 tbsp soya sauce
  • 2 tbsp teriyaki sauce
  • 1 tbsp rice vinegar
  • 1 tsp Chinese 5 spice
  • 1 tsp sugar
  • 1 tsp salt
  • Spring roll wrappers
  • Sweet chili sauce to serve

Steps:

Add 2 tbsp oil to a pan and put on a medium to high heat, add the diced onion and let it fry for 10 minutes. Add the garlic & ginger and fry together for 5 minutes. Then add the chicken, salt and fry just until the chicken has cooked on the outside. Add the cabbage. Mix the sauces, vinegar, spice, sugar and salt all together and then add this on top of the cabbage. Mix everything together and let it fry just until the cabbage is cooked, but still has a slight crunch to it. Let it cool.

Add a spoonful of the mix to 2 spring roll wrappers (I use 2 for extra crunch) and roll, to seal it properly brush the edges with water.  Repeat the process until you’ve used up all the mixture.

Add oil to a pan, you don’t need to deep fry it but ensure it cover the entire surface of the pan.

Put it on a high heat, once hot, add in the spring rolls but do not over crowd the pan. Fry until golden brown.  Let it cool and serve with sweet chili sauce. Enjoy!
