
Makes one large pizza
Ingredients
Dough:
- 3 cups cake flour
- 3 teaspoons baking powder
- 1 tbsp sugar
- 1 ½ tsp salt
- 20ml oil
- 11/4 cup water
Sauce:
- 1 tbsp ketchup
- 3 tbsp tomato paste
- 1 tsp sugar
- 1 grated garlic clove
- 1 tsp red wine vinegar
Topping:
- 1 tsp Italian herbs
- ½ tsp sugar
- 1 cup chopped chorizo
- 1 whole spring onion
- ½ green pepper diced into cubes
- 8 mushrooms
- 2 cup grated mozzarella
Steps
Dough:
Sift all the dry ingredients together then add the oil.
Add the water little by little and mix just until the dough has formed a ball and the bowl is clean. You can judge if you need more or less water as you go, that’s why its better to add it little bit at a time rather than all at once.
Roll the dough out until it’s around ½ centimeter thick. It won’t rise as high yeast dough, so try not to go thinner than this. Place the dough on baking paper and on to an oven tray.
Topping:
Preheat the oven on 200 degrees – pizza needs a hot oven
Dice the green pepper into small cubes.
Slice the mushrooms. Place a pan on a medium to high heat and add the mushrooms to a dry pan, ensure there’s no oil. This allows the mushrooms to brown properly and to avoid adding extra moisture to them. Raw mushrooms can make a pizza soggy so this is my trick to avoid that.
Fry the mushrooms until they are brown and then remove them from the pan and set aside.
Chop the spring onions, you will fry the white and light green part and leave the dark green leafy bits to add on top.
Add 1 teaspoon oil to a hot pan, add half of the spring onions with ½ a tsp sugar and let it fry for 1 minute, then add the chopped chorizo and fry until it has browned all over and released all its oil.
Remove this from the pan and place on a paper towel to get rid of excess oil
Add all the ingredients together for the sauce and spread evenly on to the dough.
Sprinkle the Italian herbs all over the base.
Add most of the grated cheese, then add the peppers, mushrooms, spring onion and chorizo distributing everything evenly. Sprinkle the top with the leftover cheese and the chopped dark bits of the green spring onion. Season with a pinch of salt and black pepper
Put it in the oven towards the lower rack so that the base gets nice and golden brown.
Bake for 20-25 minutes on 200 degrees. You want to make sure the bottom is golden brown, if it isn’t golden brown, place it right at the bottom of the oven for 5 minutes on a high heat.
Take it out of the oven once done, let it rest for 5 minutes then slice and dig in!
