
Ingredients:
- ¼ cup (32g) coconut flour
- 1 cup (128g) ground oats
- 1 tsp baking powder
- 2 eggs separated
- 250ml milk
- 40ml oil
- 1 tsp ground cinnamon
- 40ml honey (for flapjacks)
- Pinch salt
- 2 tbsp oil for frying
- 1 tbsp butter for frying
- 2 apples
- 25ml honey (for apples) and extra to drizzle on top.
Steps:
If you have a coffee grinder or blender, you can grind up the whole oats this way.
Sift the coconut flour, ground oats, baking powder, cinnamon and salt.
In a separate bowl whisk the egg yolks, milk, oil and honey together.
Add the wet ingredients to the dry ingredients and mix until combined.
Whisk the egg whites until they have formed stiff peaks, and then fold it in to the mixture. The mixture should be a cake batter consistency. You can adjust with more/less milk depending.
Put the stove on a medium to high heat and add 1 tbsp and 1 tsp butter into a pan, when the butter is melted and starts to lightly sizzle, scoop the batter with an ice-cream scoop or tablespoon and put it in the pan. Once the flapjacks have bubbles all over them and is golden brown on one side, flip them and let it fry for another minute on the other side. Keep adding a little bit of oil and butter to the pan as and when you require.
Once all your pancakes are fried, peel 2 apples and then, with the peeler, peel slices of apple into a bowl, keep peeling until you have reached the core of the apple then add the honey to the apples.
Microwave it for 2 minutes until the apples are soft.
Stack the flapjacks, add the soft honey apple. Top it with a spoonful of coconut yoghurt and drizzle honey over the top, enjoy!
Tip
You can add chopped nuts if you wish for a crunch. You can replace apple with berries too.
