Bacon & Butternut Quiche

If you’re pressed for time and don’t want to make you own pastry, you can buy short crust pastry. I used it for this quiche and its a perfect pastry to use for it. Alternatively, if you would like to make your own pastry from scratch – I have included the recipe below:

Ingredients

Pastry:

  • 200g flour
  • Half tsp salt
  • 80g butter
  • 1 egg
  • 65ml milk

Filling:

  • 500g cubed butternut
  • 2 tbsp olive oil
  • 2 tbsp Honey
  • Half tsp salt (for butternut)
  • 1 sprig Rosemary
  • 4 eggs
  • 250ml cream
  • 200g grated cheese
  • 250g bacon or turkey bacon
  • Table spoon chives
  • 1 tbsp salt
  • 1 tsp pepper

Steps

Pastry:

Sift flour and salt together in a bowl.

Cut butter into cubes, add to flour and rub it in until you get a fine crumb

Mix the egg and milk together then add to the flour mixture

Form dough and let rest while you work on your mixture

Filling:

Add butternut to a roasting tray, drizzle with olive oil, honey (or sugar) and salt and roast at 180 for 40 minutes just until the butternut is soft

Fry the bacon and set aside

In a bowl, mix together eggs, cream, half of the cheese, chives, salt & pepper

Once the butternut is soft and cooled add it to the egg mix as well as the bacon

Roll out your pastry, line in baking dish

Add egg butternut and bacon mix and top with the remaining cheese

Bake at 180 degrees for 40 minutes

Tips

You can replace the butternut with turkey bacon, smoked chicken or simply just leave it out. You can also replace the feta cheese with goats cheese – remember this will have a sharper taste though!
