
Serves 6
Ingredients:
- 2 x Medium Onions
- 2 x Chopped Garlic Cloves
- 3 x tbsp. Sugar
- 1 whole butternut
- 3 tsp. Garam masala
- 1 x tsp. Ground Cinnamon
- 2 x tsp. Cumin
- 2 x Vegetable stock cubes
- 1.5 liter water
- 200ml Cream
- Coriander
Steps:
On a medium heat, sauté onions and sugar until onions are soft and translucent.
Add the chopped garlic along with all the spices and stir well
Add chopped butternut and stir to incorporate with the spicy onion and garlic mix
Mix vegetable stock with boiling water and add enough to just cover the butternut
Let it simmer until butternut is completely soft.
Blend the mix then and add then add the cream, give it another quick blend to ensure the mixture is completely smooth.
Add salt and pepper to taste.
Add chopped coriander for serving
Tips:
If you prefer the soup to be thicker, add less water, if you prefer it thinner add a bit more water.
You can gauge and adjust the consistency once blended
