Ingredients:
Pot Sticker Dough
- 340g flour
- 5g salt
- 250ml water
Pot Sticker Filling
- 3 x chicken breasts minced
- 3 spring onion (1 cup)
- 3 garlic cloves grated
- 1 tsp (4g) grated ginger
- 1 tsp (4g) sugar
- 1 tsp (4g) salt
- 1 tsp (4g) sugar
- 1 tsp (4g) baking soda
Dipping Sauce
- 15ml soya sauce
- 15ml teriyaki sauce
- 30ml sweet chili sauce
- 30ml water
- 1 tsp grated ginger
- 1 tsp grated garlic
Method:
Dough
In a bowl, sift the flour and salt together. Add 250ml boiled water to the flour, with a spatula mix everything together until it starts the dough starts to come together. If the dough is not too hot and you are able to work with it, use your hands to knead the dough into a ball. Knead the dough for 10 minutes until the dough has elasticity and is smooth.
Leave it to rest for 1 hour
Filling
If you cannot get minced chicken, use 3 chicken breasts and with a knife get hacking and mince it up.
Slice the spring onion thinly, grate the garlic and ginger and add all the chicken
Add the rest of the ingredients and with your hands or spoon mix everything together until everything is properly incorporated.
Making the pot stickers
Roll the dough into a long roll and cut it into pieces about a 3cm wide 3cm thick then roll each piece into a ball
Roll out the balls to about more or less 5cm diameter circles, it should be quite thin
Fill each pot sticker wrapper with 1 tablespoon of the mixture in the middle. Seal it folding one side into the other and crimping the edges into each other.
Place them on to a floured surface until you’re ready to make them
Place a pan on a medium to high heat and add 2 tablespoon of oil.
Put the pot stickers in, the folded side up and let them fry until they are golden brown
Once golden brown, add 80ml water into the pan and cover with it with a lid, let it steam until all the water is gone then take them out.
Sauce
Add all the ingredients into a small pot and let it come to a gentle simmer for about 15 minutes. Pour the sauce into a bowl to be served with the delicious pot stickers

Tip:
Ensure the folded edges of the pot stickers are not too thick, or it will be a doughy and chewy around the edges.
