Potato Cheese Bread

Ingredients:

✤ Dough

  • 220g cake flour
  • 1 egg Room temperature
  • 90ml Warm milk
  • 5g Instant dry yeast
  • 2 tbs (30g) Sugar
  • 1 (5g) tsp salt
  • 30g Melted unsalted butter

✤ Mashed Potato

  • 2 Medium Potatoes
  • 20g butter
  • 30ml milk
  • 1 clove garlic
  • 1 tbs (15g) salt
  • 1 tsp (5g) black pepper
  • 150g mozzarella or white cheddar cheese
✤ Toppings Prebake
  • 1 beaten egg
✤ Toppings Post Bake
  • 20g Melted unsalted butter
  • Parsley or chives

Steps:

In a large bowl, add the egg and milk and whisk together.

Then add the yeast and sugar and whisk until the sugar is dissolved

Add the flour and salt and mix it all together, then with your hands knead the dough in the bowl until it forms a ball.

Melt the butter and pour it on the dough, knead the dough until all the butter is absorbed and the dough is smooth.

Leave the dough in a warm place to rise until it has doubled in size.

While the dough is rising, you can make the mashed potato

Cube the potatoes, then add the potatoes to a pot and cover with water. Turn the heat on high and let it the water come to a boil.

Once the potatoes are soft, strain it, add it to a bowl and mash up the potatoes

Add in the milk, melted butter, salt, pepper and finely chopped up garlic and mash everything together some more.

Once the dough has risen, divide it into 2.

Roll out 1 of the portions into a circle around 25cm in diameter and 2mm in thickness. Place it on to sheet pan covered with parchment paper.

Spoon the mashed potato mix onto the circle and even the mixture out with a knife or spatula, leaving a little space around the edges for folding

Add the grated cheese evenly around on top of the mashed potato

Roll out the second half of the dough to the same size and place it directly on top of the cheese and mashed potato mix.

Press the bottom and top dough together sealing it, and then tuck it in underneath so you have a neat round edge. Leave to sit for 25 minutes

Brush the top with the egg wash and put into the oven for 30-35 minutes at 160 degrees.

Once golden brown, take it out. Melt the butter and parsley/or chives together. Brush it all over the bread, just until it has an even coating.

Tips:

Make sure to season your mashed potato so that you do not have a bland filling, you can taste for seasoning.

Also ensure that the mash is smooth with no lumps!

You can substitute potato for pretty much anything, butternut, pumpkin, sweet potato, pulled beef or chicken etc.
